人们常因食物摄食不便，无法得到均衡营养，导致因缺乏某种营养素而患疾病。于是科学家籍实验室分析营养素的化学成分，进而以人工化学合成的方式，大量生产各种化学营养素，提供患者食用，来解决因营养素缺乏而导致的疾病，此为第一代保健食品。化学营养素可大量生产，故价格低廉，然而科学家们发现其会在体内产生副作用。

从天然食物中提炼天然营养素，最好运用纯生物技术手段，虽然价格昂贵，在各个环节生产成本都会高于人工合成，但作用效果明显强于人工合成，成为当代保健品开发的高标准方向。
